One more Digital Scullery lovely friend cooked, ate, took a picture and sent the recipe. Somewhat stolen from his mum Katy – (well done Katy though, for raising a son who is not afraid of the kitchen)!
- 4 bell peppers (2 red +2 green)
- 2 onions
- 4 medium sized tomatoes or one tin of tomatoes
- 4 chicken breast fillets
- Pasta(enough for 4 people)
Slice the onions and peppers.
Saute them a little bit in a panτα (don’t burn them)
Cut the chicken fillets in strips, ,lengthwise
Wash the fillet strips and pat them dry.
Add the chicken and the pepper slices in the pan and make sure you brown them well. Add 4 sliced tomatoes (not rock hard ones) – alternatively you can use tinned tomatoes. Just one tin will do.
Add some cayenne pepper and stir.
Let the whole lot slowly boil while you prepare the pasta.
Serve, either letting your guest add sauce or just stir everything together. Don’t forget your favourite cheese, in thin slices or grated.
